Who we are

Nordic Food Lab is a non-profit self-governed institution, established by head chef of Noma Rene Redzepi and gastronomic entrepreneur Claus Meyer, with the purpose of exploring the building blocks of Nordic cuisine and traditional and modern gastronomy, and sharing these results with chefs, academics, industry, and the public.The Lab is supported by independent foundations, private companies, and government sources. We are committed to an ideology of cooperation, knowledge sharing, and open-source research.

We seek to explore old and adapted new techniques and raw materials with relevance to the New Nordic Cuisine and share our results for the benefit of the entire Nordic region. We use this knowledge to develop recipes using Nordic raw materials and processing techniques for restaurants, food industries and individuals.
